Food Safety Atlas

Cleaning and sanitising

What a digital food safety system can do here. Technology supports the process, and people still make the decisions.

A schedule that knows what's due
Each item has its own frequency and owner, so a six-monthly job appears when it is due, and the record shows when it was last done.
A check for each item and machine
The day's list is built from the schedule, so a missed item is counted as missed. Each machine gets its own reading.
Failures stay open
A failed item stays open until it is recleaned or repaired, with the cause recorded, so repeat failures on one item stand out.
Sensors on the machine
A logger on a dishwasher's rinse can record each cycle's temperature, and alert someone when it falls short of the set point.
Test results as a trend
Swab results are held by site and date, so a slow rise on one piece of equipment is visible before it fails.
