What happens
Anyone who finds a reading, food, condition or practice outside the standard tells a person who can decide, straight away.
Good looks like
'Chicken at 9 °C in cool room 1, found at 7 am' reaches the supervisor before the finder walks away. A suspicion is enough to report.
How it goes wrong
A cook sees the hot display at 52 °C, turns the dial up and says nothing. Lunch is served from it.

Technical
A deviation means no one yet knows how far it reaches. Report what was found, where, when and by whom. Write the true reading, because the record is worth nothing if a 6 becomes a 5 to avoid a conversation.
