Food Safety Atlas

Labels, date marks and shelf life

Technical reference

Labels and date marks are law, and the wrong one is a question. Shelf life is different: law asks for a date, but mostly leaves the number to the business, which has to be able to show it. So keep law, guidance and your own decisions apart, and know which one each date rests on.

Some bacteria grow at refrigerated temperatures, so a cold food can reach a level that makes people sick. Others, such as Clostridium botulinum, grow where there is no air, which is why vacuum-packed food must be refrigerated or frozen.
