Listeria in ready-to-eat food

Technical reference

Three features make different: it grows at refrigeration temperatures, it persists in the environment, and its severity is greatest for vulnerable consumers. So controls focus on post-process contamination and on shelf life.

Parameters

Growth limits−0.4 to 45 °C; 0.92; 4.4 to 9.4
Schedule 27, growth can occurn=5, c=0, in 25 g
Schedule 27, no growthn=5, c=0, m=10²
Listericidal processReduces to a safe level
Thermal example reduction: 2 min at 70 °C (FDA)

Records that prove it

  • Growth assessment and evidence
  • Shelf-life validation
  • Environmental monitoring results
  • Product results
  • Investigation and corrective action

CCP or prerequisite?

That depends on the for your process. The number, if it has one, belongs to your plan.
