Getting and keeping permission to trade

Step 1 of 8

Find your route

What happens

For each site and each activity, work out which regulator you answer to and what kind of permission it wants. Do this before you sign a lease or fit out.

Good looks like

The answer is written down per site, and it covers catering, delivery and mobile work as well as the main kitchen.

How it goes wrong

A second site opens in another state on the assumption that the first state's paperwork covers it.

Australia has eight routes: notify, register or license, by state or territory. New Zealand registers a plan or programme. Singapore licenses by activity: retail and catering under one Act, supplying other businesses under another. Malaysia registers the premises with the Ministry of Health, with a separate local authority licence. The table in the dossier shows each one.
