Food Safety Atlas

Portioning under time and temperature control

Step 1 of 8

Match the job to the food

What happens

Before touching anything, confirm the item, quantity and date on the job against what is on the trolley. Work out whether the team can finish within your time .

Good looks like

A job of 600 portions at 15 a minute would take 40 minutes, so it is split into two batches before anything comes out.

How it goes wrong

The whole trolley comes out for a job that takes an hour, and the last pans sit open while the first are done.

Who
Technical

sets 30 minutes as the most for any chilled product. Divide quantity by the line's real rate, with breaks and stoppages allowed for. Each batch gets its own record.
