Decide which produce owes it
Before preparing, identify produce that will be eaten without cooking. Check whether bought pre-washed or pre-cut produce has its own controls.
The prep list marks garnish, salad and cut fruit as needing this step, and marks soup vegetables as going to the cook step.
Only salads get washed, while mint for the dessert goes straight from the box to the plate.
Pre-washed or pre-cut produce should come from suppliers whose process you've evaluated. Produce that will be cooked is controlled by the cooking step instead.
