Work out a heat kill
Set the coldest point's temperature and hold time, and see the reduction in Listeria monocytogenes from FDA's published process. It uses a reference of 6 logs in 2 minutes at 70 °C, with z = 7.5 °C.
3.0-log reduction
At 70 °C: D ≈ 20 s. A 6-log kill takes 2.0 minutes.
Above the line meets a kill for this organism. The calculation assumes the coldest point holds that temperature for the full time, and that the published values apply. It doesn't destroy or toxin, and your own process needs validating. Source: , Table A-3.
